Ingredients 

  • pepper and salt    
  • 1/4 cup extra virgin olive oil 
  • Four medium yams 
  • 1/4 cup red-colored miso paste 

Directions: 

  • Pre-heat oven to 425ºF (218ºC). 
  • Create a gravy by mixing the extra virgin olive oil, pepper, salt, and red-colored miso paste. 
  • Peel off and cut yams into equal-sized discs or pieces. 
  • Put the yams in the gravy. 
  • Put yams on a sheet pan in one layer. 
  • Roast for 30 to 40 minutes, or until yams are soft.
